Ingredients
  

  • 225 gram cream cheese softened
  • 120 gram sour cream
  • 120 milliliter mayonnaise
  • 120 gram shredded mozzarella cheese
  • 60 gram grated Parmesan cheese
  • 240 gram frozen spinach thawed and well-drained
  • 200 gram canned artichoke hearts drained and chopped
  • 2 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • Squeeze all excess water from the thawed spinach using your hands or a clean kitchen towel and set aside.
  • Chop the drained artichoke hearts into small pieces and set aside.
  • In a large mixing bowl, add the softened cream cheese, sour cream, and mayonnaise.
  • Stir the cream cheese mixture until smooth and well combined.
  • Add the mozzarella cheese, Parmesan cheese, minced garlic, salt, black pepper, and red pepper flakes to the bowl and mix well.
  • Fold the drained spinach and chopped artichoke hearts into the cheese mixture until evenly distributed.
  • Transfer the mixture to an 8x8-inch baking dish and spread it into an even layer.
  • Place the baking dish in the preheated oven and bake for 18–20 minutes, or until hot and bubbly and the edges are lightly golden.
  • Remove the dish from the oven and let the dip rest for 5 minutes before serving.

Notes

For best results, ensure the spinach is very well drained to avoid a watery dip, and let the cream cheese come to room temperature so it mixes smoothly. You can prepare the mixture ahead of time, refrigerate it covered, and bake just before serving, adding a few extra minutes to the cook time if it goes into the oven cold. Adjust the seasoning to taste, increasing garlic or red pepper flakes for more punch, and feel free to top with extra mozzarella for a cheesier, more browned top. Serve with keto-friendly dippers like cucumber slices, celery sticks, bell pepper strips, pork rinds, or low-carb crackers, and keep the dip warm in a low oven or a small slow cooker if serving at a party.
