Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup buttermilk
  • 8 pieces chicken drumsticks and thighs
  • 4 cups vegetable oil

Instructions
 

  • - Mix the flour, salt, black pepper, garlic powder, onion powder, paprika, cayenne pepper, thyme, and oregano in a large mixing bowl.
  • - Pour the buttermilk into a separate bowl.
  • - Dip each piece of chicken into the buttermilk, then coat it thoroughly with the flour mixture.
  • - Place the coated chicken pieces on a wire rack and let them rest for 10 minutes.
  • - Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • - Carefully add the chicken pieces to the hot oil using tongs and fry for 10-12 minutes until golden brown and cooked through.
  • - Use a thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C).
  • - Remove the chicken from the oil and place it on a wire rack over a baking sheet to drain excess oil.
  • - Allow the chicken to rest for at least 5 minutes before serving.

Notes

To ensure the chicken remains juicy, avoid overcrowding the frying pot as this can lower the oil temperature, leading to uneven cooking. Adjust the heat as necessary to maintain consistent oil temperature, which is key to achieving a crispy exterior. Additionally, using a thermometer to check the internal temperature will help avoid overcooking the chicken.
