Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups marinara sauce
  • 1 can diced tomatoes 14.5 ounces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup fresh basil chopped

Instructions
 

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the ground beef and cook until browned, breaking it up with the wooden spoon.
  • Add the onion and garlic and sauté until the onion is translucent.
  • Pour in the chicken broth, marinara sauce, and diced tomatoes, then stir well.
  • Season with Italian seasoning, salt, and black pepper.
  • Bring the mixture to a boil, then reduce heat to a simmer.
  • Add the broken lasagna noodles to the pot and cook until al dente.
  • Stir in the ricotta cheese until well combined.
  • Simmer for an additional 5 minutes to let flavors meld.
  • Ladle soup into bowls and top with mozzarella, Parmesan, and fresh basil before serving.

Notes

For best results, ensure that the lasagna noodles are broken into uniform pieces so they cook evenly. If you prefer a thicker consistency, allow the soup to simmer a bit longer to reduce slightly. Adjust seasoning to taste and feel free to add some red pepper flakes for a bit of heat.
