Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups spaghetti sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef to the pot and cook until browned, breaking it up with a wooden spoon.
  • Remove excess fat from the pot, leaving about a tablespoon.
  • Add onion and garlic to the pot and sauté until the onion is translucent.
  • Stir in chicken broth, spaghetti sauce, basil, oregano, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat to a simmer.
  • Add broken lasagna noodles to the pot and cook until tender, stirring occasionally.
  • Once noodles are cooked, remove the pot from heat and let the soup rest for 5 minutes.
  • In serving bowls, ladle soup and top with a dollop of ricotta cheese.
  • Sprinkle mozzarella and Parmesan cheese over the top.
  • Garnish with chopped fresh parsley before serving.

Notes

For best results, allow the soup to rest for a few minutes after cooking to let the flavors meld together. If you prefer a thicker soup, you can reduce the amount of chicken broth slightly. Adjust the seasonings according to taste, and feel free to add vegetables like spinach or zucchini for additional nutrition.
