Ingredients
  

  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter melted
  • 1 cup Milk
  • 1 tablespoon Lemon zest
  • 1/4 cup Lemon juice freshly squeezed
  • 1/4 teaspoon Vanilla extract
  • 1/2 cup Powdered sugar for optional glaze
  • 2 tablespoons Lemon juice for optional glaze

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • Add the melted butter, milk, lemon zest, lemon juice, and vanilla extract to the dry ingredients.
  • Mix until the batter is well combined and smooth.
  • Pour the batter into a greased 9x9 inch baking dish.
  • Bake in the preheated oven for 35-40 minutes or until the top is golden brown.
  • Remove from the oven and let it rest for 10 minutes before serving.
  • For an optional glaze, mix powdered sugar with lemon juice until smooth.
  • Drizzle the glaze over the cobbler before serving if desired.

Notes

For the best results, ensure all ingredients are at room temperature before starting. The cobbler can be served warm or at room temperature and pairs excellently with a scoop of vanilla ice cream or whipped cream. If you prefer a stronger lemon flavor, consider increasing the amount of lemon zest slightly.
