Ingredients
  

  • 2 pounds Potatoes peeled and quartered
  • 1/3 cup Olive oil
  • 1/2 cup Fresh lemon juice
  • 1 tablespoon Dried oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Chicken broth
  • 3 cloves Garlic minced

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine olive oil, lemon juice, oregano, salt, and pepper.
  • Add potatoes to the bowl and toss them well to coat evenly.
  • Transfer the potatoes to a baking dish and pour chicken broth over them.
  • Sprinkle minced garlic over the potatoes.
  • Bake in the preheated oven for 1 hour, stirring halfway through cooking.
  • Remove from the oven and let them rest for 5 minutes before serving.

Notes

For best results, choose waxy potatoes like Yukon Gold, which hold their shape well during cooking. Adjust the lemon juice to your taste preference for more or less tanginess. If the potatoes appear too dry during baking, you can add a bit more chicken broth or water to keep them moist. Serve these potatoes alongside grilled meats or a fresh salad for a complete meal.
