Ingredients
  

  • 4 pieces Boneless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 2 cloves Garlic minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and black pepper.
  • Place the chicken breasts on a cutting board and pat them dry with a paper towel.
  • Rub the herb and lemon mixture evenly over the chicken breasts.
  • Arrange the chicken breasts on a baking sheet.
  • Roast the chicken in the preheated oven for 30 minutes or until the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the oven and let it rest for 5 minutes before serving.

Notes

To ensure the chicken stays moist, avoid overcooking by using a meat thermometer to check for doneness. You can also marinate the chicken for a few hours or overnight for extra flavor. Serve with a side of roasted vegetables or a fresh salad for a complete meal.
