Lemon Pasta with Honey Glazed Chicken Breast

Ingredients
  

  • 4 pieces chicken breast
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 pound spaghetti pasta
  • 2 tablespoons butter
  • 1 lemon zested and juiced
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped, for garnish

Instructions
 

  • In a mixing bowl, combine honey, soy sauce, and lemon juice to make the glaze.
  • Season chicken breasts with salt and black pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown.
  • Pour the honey glaze over the chicken and continue cooking for an additional 5 minutes, or until the chicken is cooked through.
  • Remove chicken from skillet and let it rest for 5 minutes.
  • In a large pot, bring salted water to a boil and cook spaghetti according to package instructions.
  • Drain the pasta using a colander and return it to the pot.
  • Add butter, lemon juice, lemon zest, and Parmesan cheese to the pasta; toss to combine.
  • Slice the rested chicken breasts and serve over the lemon pasta.
  • Garnish with chopped parsley and additional Parmesan cheese before serving.

Notes

For the best results, make sure the chicken breasts are of even thickness to ensure they cook evenly. When making the lemon pasta, adjust the amount of lemon juice and zest to your taste preference for a more or less tangy flavor. Additionally, keep an eye on the honey glaze to prevent burning, as it can quickly caramelize.
