Lentil Barley Beef Stew

Ingredients
  

  • 1 pound beef stew meat cubed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 1 cup pearl barley
  • 1 cup lentils rinsed
  • 8 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add beef stew meat and brown on all sides, then remove from the pot.
  • In the same pot, add onion, carrots, celery, and garlic, and sauté until soft.
  • Stir in tomato paste, Worcestershire sauce, and let cook for 2 minutes.
  • Return beef to the pot and add lentils, barley, beef broth, salt, pepper, thyme, and bay leaf.
  • Bring to a boil, then reduce heat to low and simmer covered for 1.5 hours.
  • Remove the bay leaf and adjust seasoning if necessary.
  • Let the stew rest for 10 minutes before serving.

Notes

For deeper flavor, consider marinating the beef in Worcestershire sauce for a few hours before cooking. You can also add more vegetables like potatoes or peas for added nutrition. If you like a thicker stew, simmer it uncovered for the last 20 minutes to reduce the liquid further.
