Ingredients
  

  • 1 3/4 cup all-purpose flour
  • 1 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 1 cup canned pumpkin
  • 1/2 cup chopped nuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the loaf pan with a cooking spray or a thin layer of butter.
  • In a mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  • In another bowl, combine the eggs, vegetable oil, water, and canned pumpkin until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • If using, fold in the chopped nuts gently.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 65 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the bread cool in the pan for 10 minutes.
  • Transfer to a cooling rack to cool completely before slicing.

Notes

For best results, make sure not to overmix the batter once the wet and dry ingredients are combined to ensure a light and tender texture. Allow the bread to cool fully for even slicing, and feel free to experiment with different nuts or add-ins like chocolate chips for variety.
