Ingredients
  

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 pound elbow macaroni
  • 2 cups whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon parsley chopped

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, cook the elbow macaroni according to package instructions and drain.
  • In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, Worcestershire sauce, salt, black pepper, garlic powder, and onion powder.
  • Transfer the meat mixture into a loaf pan and press down evenly.
  • In a medium saucepan, melt butter over medium heat, then whisk in flour to make a roux.
  • Gradually add milk to the roux while whisking continuously until thickened.
  • Stir in cheddar cheese and mozzarella cheese until melted and smooth.
  • Add cooked macaroni to the cheese sauce and mix well.
  • Spread the mac and cheese mixture over the meatloaf in the loaf pan.
  • Sprinkle the top with parmesan cheese and chopped parsley.
  • Place the loaf pan in the oven and bake for 1 hour.
  • Let the casserole rest for 10 minutes before slicing and serving.

Notes

For a crispier topping, you can broil the casserole for an additional 2-3 minutes after baking. If you prefer a spicier kick, add a pinch of cayenne pepper to the cheese sauce. To ensure your meatloaf stays moist, avoid overmixing the meat mixture. Feel free to experiment with different cheese combinations to find your perfect flavor profile.
