Ingredients
  

  • 8 ounces elbow macaroni uncooked
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup celery diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Cook the macaroni in a large pot of salted boiling water until al dente, about 8-10 minutes.
  • Drain the macaroni in a colander and rinse under cold water to stop the cooking process.
  • In a medium mixing bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
  • In a large mixing bowl, combine the cooked macaroni, celery, red onion, bell pepper, and parsley.
  • Pour the dressing over the macaroni mixture and mix until well combined.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
  • Before serving, stir the salad once more and adjust seasoning if necessary.

Notes

For the best results, ensure that the macaroni is properly cooled before mixing it with the dressing to prevent it from absorbing too much liquid. Feel free to customize by adding other ingredients like hard-boiled eggs, chopped pickles, or shredded cheese for extra flavor and texture. If you find the salad too dry after resting, you can add a little more mayonnaise or a splash of milk to loosen it up.
