Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound chicken breasts diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cherry tomatoes halved
  • 2 cups spinach chopped
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh basil chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Season diced chicken with salt, pepper, and Italian seasoning.
  • Add chicken to the pot and cook until browned, about 5 minutes.
  • Remove chicken from the pot and set aside.
  • In the same pot, add onion and garlic, cooking until onion is translucent.
  • Pour in chicken broth and bring to a simmer.
  • Stir in heavy cream and bring back to a simmer.
  • Add cherry tomatoes and spinach, cooking until spinach is wilted.
  • Return chicken to the pot and heat through.
  • Stir in parmesan cheese and fresh basil, mixing well.
  • Remove from heat and let soup rest for 5 minutes before serving.

Notes

For best results, use fresh ingredients, especially when it comes to the basil and spinach, as they enhance the flavor significantly. Adjust seasoning according to taste, and consider adding a splash of lemon juice for a touch of acidity. This soup can also be made with leftover chicken, reducing the cooking time slightly.
