Ingredients
  

  • 4 large potatoes peeled and cubed
  • 2 tablespoons butter
  • 1/2 cup milk
  • salt to taste
  • pepper to taste
  • 4 large carrots peeled into ribbons
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme chopped

Instructions
 

  • Boil the potatoes in a large pot of salted water until tender.
  • Drain the potatoes using a colander and return them to the pot.
  • Add butter and milk to the potatoes and mash until smooth.
  • Season the mashed potatoes with salt and pepper to taste.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add carrot ribbons to the skillet and cook until charred and tender.
  • Season the charred carrots with fresh thyme.
  • Transfer the mashed potatoes to a serving bowl.
  • Top the mashed potatoes with the charred carrot ribbons.
  • Let the dish rest for 5 minutes before serving.

Notes

When making mashed potatoes, ensure that the potatoes are fully cooked by piercing them with a fork; they should be easy to break apart. For the carrot ribbons, be sure not to overcrowd the skillet to allow them to char properly. Adjust the seasoning of both the potatoes and carrots according to your taste preference.
