Equipment

  • 1 Saucepan
  • 1 Whisk
  • 1 Mixing bowl
  • 4 Ramekins or small serving bowls
  • 1 measuring cup
  • 1 Sieve

Ingredients
  

  • 2 tablespoon Matcha powder
  • 1/2 cup Granulated sugar
  • 2 tablespoon Cornstarch
  • 2 cup Whole milk
  • 1/4 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Instructions
 

  • In a mixing bowl, whisk together the matcha powder, granulated sugar, and cornstarch.
  • Gradually add 1/2 cup of milk to the dry ingredients, whisking until smooth.
  • Pour the remaining milk and heavy cream into a saucepan and heat over medium heat until it begins to steam.
  • Slowly whisk the heated milk mixture into the matcha mixture until fully combined.
  • Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
  • Remove from heat and stir in the vanilla extract and salt.
  • Sieve the pudding mixture into the ramekins to remove any lumps.
  • Allow the pudding to cool to room temperature, then refrigerate for at least 2 hours until set.

Notes

For best results, ensure the matcha powder is well sifted to prevent clumps, and continuously stir the pudding mixture while it thickens to avoid it sticking to the saucepan. Adjust the sweetness to taste by adding more or less sugar as preferred.
