Ingredients
  

  • 4 pieces boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon juiced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Preheat the skillet over medium-high heat and add olive oil.
  • Season the chicken breasts with oregano, thyme, rosemary, salt, and black pepper.
  • Sear the chicken in the skillet for 5 minutes per side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add lemon juice, cherry tomatoes, and Kalamata olives.
  • Cook for 3-4 minutes until the tomatoes start to soften.
  • Return the chicken to the skillet and reduce heat to low.
  • Cover and simmer for 15 minutes until the chicken is cooked through.
  • Remove from heat and let the dish rest for 5 minutes.
  • Garnish with crumbled feta cheese and fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in the spice blend with olive oil and lemon juice for a few hours before cooking. This will help tenderize the meat and infuse the flavors deeply. Adjust the seasoning to suit your taste and consider adding a splash of white wine to the skillet for a richer sauce.
