Mexican Cornbread Casserole with Jiffy & Ground Beef

Ingredients
  

  • 1 pound ground beef
  • 1 package (8.5 ounces) Jiffy cornbread mix
  • 1 cup milk
  • 2 large eggs
  • 1 can (15 ounces) whole kernel corn drained
  • 1 can (15 ounces) cream-style corn
  • 1 cup shredded cheddar cheese
  • 1 medium onion chopped
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup sliced jalapeños optional

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat and sauté chopped onion until translucent.
  • Add ground beef to the skillet, breaking it apart with a spatula, and cook until browned.
  • Stir in chili powder, cumin, salt, and pepper, and cook for an additional 2 minutes.
  • Remove from heat and drain any excess fat.
  • In a mixing bowl, combine Jiffy cornbread mix, milk, and eggs, and whisk until smooth.
  • Stir in whole kernel corn, cream-style corn, and half of the shredded cheddar cheese.
  • Pour half of the cornbread mixture into a greased baking dish.
  • Spread the ground beef mixture evenly over the cornbread layer.
  • Top with the remaining cornbread mixture.
  • Sprinkle the top with the remaining shredded cheddar cheese and jalapeños if using.
  • Bake in the preheated oven for 40 minutes or until the cornbread is golden brown.
  • Allow the casserole to rest for 10 minutes before serving.

Notes

For a spicier version, consider adding more jalapeños or a dash of hot sauce to the ground beef mixture. You can also substitute ground turkey or chicken for a lighter version. To ensure the cornbread topping is perfectly cooked, insert a toothpick into the center of the casserole; it should come out clean when done.
