Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup mini chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease the mini muffin pan.
  • In a mixing bowl, whisk together melted butter and sugar until well combined.
  • Add the eggs and vanilla extract to the mixture and whisk until smooth.
  • Sift in the cocoa powder, flour, salt, and baking powder, and gently fold with a spatula until just combined.
  • Stir in the mini chocolate chips until evenly distributed.
  • Spoon the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
  • Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Remove from the oven and let the brownie bites cool in the pan for about 5 minutes.
  • Transfer the bites to a cooling rack to cool completely before serving.

Notes

For best results, ensure not to overmix the batter as this can lead to dense brownie bites. If you like your brownies extra fudgy, reduce the cooking time slightly, checking them a minute or two earlier. You can also experiment by adding nuts or a sprinkle of sea salt on top for additional flavor.
