Ingredients
  

  • 2 cups fresh peaches peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a medium mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, and vanilla extract.
  • Divide the peach mixture evenly among the 6 ramekins.
  • In another bowl, whisk together the flour, brown sugar, baking powder, and salt.
  • Add the melted butter and milk to the dry ingredients and stir until just combined.
  • Pour the batter evenly over the peach mixture in each ramekin.
  • Place the ramekins on a baking sheet and bake for 25 minutes or until the top is golden brown.
  • Remove from the oven and let the cobblers rest for 10 minutes before serving.

Notes

For extra tips, ensure the peaches are ripe for the best flavor and juiciness. You can substitute canned peaches if fresh ones are out of season, just be sure to drain them well. Serve the cobblers warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat. If you prefer a spicier flavor, consider adding a pinch of cinnamon or nutmeg to the peach mixture.
