Ingredients
  

  • 4 apples medium, peeled and sliced
  • 2 tablespoon miso paste
  • 1 tablespoon fresh ginger grated
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions
 

  • Peel and slice the apples using a peeler and knife on a cutting board.
  • In a saucepan, combine water, miso paste, grated ginger, brown sugar, and cinnamon.
  • Stir the mixture over medium heat until the miso paste and sugar dissolve.
  • Add the sliced apples to the saucepan and mix well to coat with the sauce.
  • Reduce the heat to low and cover the saucepan, allowing the apples to simmer for about 15 minutes.
  • Stir occasionally until the apples become tender.
  • Remove the saucepan from heat and stir in the lemon juice.
  • Allow the stewed apples to rest for 5 minutes before serving.

Notes

For best results, choose apples that are firm and slightly tart, such as Granny Smiths, to balance the sweetness of the dish. Adjust the amount of sugar based on your taste preference and the natural sweetness of the apples. If you prefer a smoother sauce, you can mash some of the apples with the back of the spoon while cooking.
