Miso Noodle Soup

  • 1 measuring cup
  • 1 tablespoon

Ingredients
  

  • 8 cup water
  • 4 tablespoon miso paste
  • 2 tablespoon soy sauce
  • 1 tablespoon dashi granules
  • 7 ounce soba noodles
  • 1 block firm tofu cubed
  • 1 cup shiitake mushrooms sliced
  • 2 green onions sliced
  • 1 tablespoon sesame oil
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Bring water to a boil in a large pot.
  • Add the soba noodles and cook according to package instructions until tender.
  • Drain the noodles and set aside.
  • In the same pot, add miso paste, soy sauce, dashi granules, and stir until dissolved.
  • Add tofu cubes and sliced shiitake mushrooms to the pot.
  • Simmer for about 5 minutes until tofu is heated through.
  • Add the cooked soba noodles back into the pot.
  • Stir in sesame oil and season with salt and pepper.
  • Ladle the soup into bowls and garnish with sliced green onions.

Notes

For a richer flavor, you can sauté the mushrooms in sesame oil before adding them to the soup. Adjust the amount of miso paste to your taste preference, as different brands can vary in saltiness. If you do not have dashi granules, you can use a vegetable or chicken broth as a substitute.
