Ingredients
  

  • 4 cups frozen mixed berries
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the frozen mixed berries with lemon juice and 1/2 cup of sugar, then set aside.
  • In another mixing bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  • Add the melted butter, milk, and vanilla extract to the dry ingredients and stir until a smooth batter forms.
  • Pour the batter into the baking dish, spreading it evenly.
  • Spoon the berry mixture over the batter without stirring.
  • Bake in the preheated oven for 45 minutes or until the top is golden brown.
  • Allow the cobbler to rest for 10 minutes before serving.

Notes

For a crispier top, sprinkle a little extra sugar over the berries before baking. If you prefer a thicker filling, you can add a tablespoon of cornstarch to the berry mixture. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent dessert.
