Ingredients
  

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 large egg
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup ketchup for topping
  • 2 tablespoons brown sugar for topping

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a skillet, sauté the onion and garlic until softened.
  • In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, and milk.
  • Add the sautéed onion and garlic to the bowl.
  • Whisk together the egg, 0.25 cup ketchup, Worcestershire sauce, salt, black pepper, thyme, oregano, and cayenne pepper.
  • Pour the whisked mixture into the meat mixture and mix thoroughly.
  • Transfer the meat mixture to a loaf pan and shape it into a loaf.
  • In a small bowl, mix 0.5 cup ketchup with brown sugar for the topping.
  • Spread the ketchup topping evenly over the meatloaf.
  • Bake in the preheated oven for 1 hour or until the meatloaf reaches an internal temperature of 160°F (71°C).
  • Remove from oven and let the meatloaf rest for 10 minutes before slicing.

Notes

To ensure your meatloaf stays moist, avoid over-mixing the meat mixture as this can lead to a dense loaf. For added flavor, consider incorporating finely chopped bell peppers or mushrooms into the mixture. Allowing the meatloaf to rest after cooking helps the juices redistribute, making each slice perfectly tender.
