  • 4 sterilized glass jars with lids

Ingredients
  

  • 4 cups mulberries fresh or frozen
  • 2 cups granulated sugar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract

Instructions
 

  • Rinse the mulberries thoroughly under cold water and remove any stems.
  • In a large saucepan, combine mulberries, sugar, and lemon juice.
  • Place the saucepan over medium heat and stir with a wooden spoon until the sugar dissolves.
  • Use a potato masher to gently crush the mulberries as they start to heat up.
  • Bring the mixture to a boil and continue to cook for 20-25 minutes, stirring frequently.
  • Once the jam reaches your desired thickness, remove from heat and stir in the vanilla extract.
  • Use a ladle and funnel to pour the hot jam into sterilized jars, leaving 1/4 inch headspace.
  • Secure the lids on the jars and let them cool at room temperature.
  • Once cooled, store the jars in a cool, dark place for 24 hours to allow flavors to develop.

Notes

Ensure the mulberries are ripe for the best flavor in your jam. If you prefer a smoother texture, you can pass the jam through a fine mesh sieve to remove seeds before canning. Always use sterilized jars to prevent spoilage, and consider labeling the jars with the date for easy tracking.
