Ingredients
  

  • 500 grams mushrooms sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Melt the butter in a large saucepan over medium heat.
  • Add the chopped onion and minced garlic, and sauté until softened.
  • Stir in the sliced mushrooms and cook until they release their juices and start to brown.
  • Sprinkle the flour over the mushrooms and stir to combine.
  • Gradually add the vegetable broth, stirring constantly to avoid lumps.
  • Bring the mixture to a simmer and cook for about 15 minutes.
  • Remove from heat and blend the soup until smooth using a blender or immersion blender.
  • Return the soup to the saucepan and stir in the heavy cream.
  • Season with salt, black pepper, and fresh thyme.
  • Simmer for an additional 5 minutes, then remove from heat.
  • Let the soup rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For a richer flavor, consider using a mix of different types of mushrooms such as cremini and shiitake. If you prefer a thinner soup, you can adjust the consistency by adding more broth. Remember to taste and adjust the seasoning as needed, especially after adding the cream, as this can mellow out the flavors.
