Ingredients
  

  • 1 pound mushrooms sliced
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 3 cups vegetable broth
  • 1 cup carrots diced
  • 1 cup potatoes diced
  • 1 teaspoon thyme dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions and minced garlic, sauté until onions are translucent.
  • Stir in sliced mushrooms and cook until they release their juices.
  • Add carrots and potatoes to the pot and stir well.
  • Pour in vegetable broth and bring the mixture to a boil.
  • Reduce heat, cover, and simmer for 45 minutes.
  • Add thyme, salt, and black pepper, stirring to combine.
  • Continue to simmer for an additional 15 minutes until vegetables are tender.
  • Remove from heat and let the stew rest for 10 minutes.
  • Garnish with chopped parsley before serving.

Notes

For a richer taste, try incorporating a variety of mushrooms like cremini or shiitake. You can also add a splash of cream or a handful of spinach towards the end of cooking for added flavor and texture. Adjust the seasoning as needed to suit your taste preferences.
