Equipment

  • 1 Wooden spoon
  • 1 measuring cup
  • 1 Knife
  • 1 chopping board

Ingredients
  

  • 1 tablespoon olive oil
  • medium onion chopped
  • 2 clove garlic minced
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes
  • 1 can green chilies
  • 4 cup chicken broth
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips crushed
  • Salt to taste
  • pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sauté until softened.
  • Add ground beef to the pot and cook until browned.
  • Stir in taco seasoning and cook for 1 minute.
  • Add black beans, diced tomatoes, green chilies, and chicken broth.
  • Bring the mixture to a boil, then reduce heat to simmer.
  • Add corn kernels and cook for an additional 10 minutes.
  • Season with salt and pepper to taste.
  • Remove from heat and let the soup rest for 5 minutes.
  • Serve hot, topped with shredded cheddar cheese and crushed tortilla chips.

Notes

For extra flavor, consider adding a squeeze of lime juice or a sprinkle of fresh cilantro on top before serving. Adjust the level of spiciness to your preference by adding more or less green chilies or taco seasoning. If you prefer a thicker soup, allow it to simmer longer to reduce the liquid.
