Oatmeal Cookie Crust Gooey Brownie Bars

Ingredients
  

  • 1 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 cup granulated sugar

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine melted butter, brown sugar, oats, flour, baking soda, and salt.
  • Press the oat mixture firmly into the bottom of a greased 9x13 inch baking dish to form the crust.
  • In a saucepan over low heat, melt the chocolate chips with sweetened condensed milk and vanilla extract, stirring until smooth.
  • In another bowl, whisk together cocoa powder, eggs, and granulated sugar until well combined.
  • Add the melted chocolate mixture into the cocoa mixture and stir until fully blended.
  • Pour the brownie mixture over the oat crust in the baking dish.
  • Bake in the preheated oven for 30-35 minutes, or until the top is set and a toothpick inserted into the center comes out mostly clean.
  • Allow the bars to cool in the pan on a wire rack for 20 minutes before cutting into squares.

Notes

Ensure the oat crust is compact by pressing it down firmly in the baking dish to prevent it from crumbling when slicing the bars. Allow the bars to cool completely if you prefer cleaner cuts or store them in the refrigerator for a firmer texture. Adjust the sweetness by using dark chocolate chips if desired.
