Ingredients
  

  • 500 grams fresh okra chopped
  • 2 tablespoons vegetable oil
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 400 grams canned tomatoes crushed
  • 500 ml chicken broth
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Stir in the garlic and ginger, cooking for another minute until fragrant.
  • Add the cumin, coriander, turmeric, and cayenne pepper, stirring well to combine.
  • Pour in the crushed tomatoes and chicken broth, bringing the mixture to a simmer.
  • Add the chopped okra, stirring to coat with the sauce.
  • Season the stew with salt and black pepper to taste.
  • Reduce the heat to low, cover the pot, and let the stew simmer for 30-35 minutes, stirring occasionally.
  • Remove the pot from heat and let the stew rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

To prevent the okra from becoming slimy, avoid over-stirring and cook at a gentle simmer. You can also add a splash of vinegar or lemon juice to reduce the sliminess. This dish pairs well with rice or flatbread to soak up the flavorful sauce. Adjust spices to suit your taste preferences.
