Ingredients
  

  • 8 ounce cream cheese softened
  • 0.5 cup sour cream
  • 1 cup green olives pitted and finely chopped
  • 0.25 cup black olives pitted and finely chopped
  • 2 tablespoon olive brine reserved from jar
  • 1 clove garlic minced
  • 2 tablespoon fresh parsley finely chopped
  • 0.25 teaspoon black pepper ground
  • 0.25 teaspoon smoked paprika
  • 0.25 teaspoon onion powder
  • 0.125 teaspoon salt or to taste

Instructions
 

  • Place the softened cream cheese and sour cream into the mixing bowl.
  • Beat or stir the cream cheese and sour cream together until smooth and well combined.
  • Add the chopped green olives, chopped black olives, and olive brine to the bowl.
  • Stir in the minced garlic, chopped parsley, black pepper, smoked paprika, onion powder, and salt.
  • Mix thoroughly with the spatula until all ingredients are evenly distributed and the dip is uniform.
  • Taste and adjust seasoning with additional salt, pepper, or olive brine if desired.
  • Cover the bowl tightly with plastic wrap or transfer the mixture to an airtight container.
  • Refrigerate the dip for at least 30 minutes to allow the flavors to meld.
  • Before serving, stir the dip once more and transfer to a serving bowl.
  • Serve chilled with crackers, toasted baguette slices, vegetable sticks, or pita chips.

Notes

For best flavor, let the dip rest even longer than 30 minutes—up to overnight—in the refrigerator, as the olives and spices continue to infuse the cream cheese. If it firms up too much, let it sit at room temperature for 10–15 minutes and stir to loosen. You can adjust the texture by adding an extra spoonful of sour cream or olive brine for a looser, more scoopable dip. Finely chopping the olives ensures a smoother, more spreadable consistency and even flavor in every bite. Garnish just before serving with a drizzle of olive oil, a sprinkle of paprika, or a few sliced olives and chopped herbs for a more attractive presentation.
