  • 1 Cutting board
  • 1 sharp knife
  • 1 Wooden spoon
  • 1 measuring cup
  • 1 Ladle

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots peeled and sliced
  • 2 stalks celery sliced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until the onion is translucent.
  • Add sliced carrots and celery, continue cooking for 5 minutes.
  • Pour in the chicken broth and bring to a boil.
  • Stir in orzo pasta and reduce heat to a simmer.
  • Cook the orzo for about 8-10 minutes until tender.
  • Add shredded chicken to the pot and stir well.
  • Season the soup with dried thyme, dried oregano, salt, and pepper.
  • Simmer for an additional 5 minutes to blend flavors.
  • Remove the pot from heat and let the soup rest for 5 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

For the best flavor, use homemade chicken broth if possible, and feel free to add more vegetables like spinach or kale for added nutrition. If you find the soup too thick after resting, simply add extra broth to reach your desired consistency.
