Ingredients
  

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Cook orzo pasta in a pot of boiling salted water until al dente, about 8-10 minutes.
  • Drain the orzo using a colander and rinse it under cold water to stop the cooking process.
  • In a large mixing bowl, whisk together olive oil, lemon juice, lemon zest, salt, and black pepper.
  • Add the cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, and parsley to the bowl.
  • Toss all ingredients together until well combined and evenly coated with the dressing.
  • Let the salad rest for 5 minutes at room temperature to allow flavors to meld.
  • Serve the salad chilled or at room temperature.

Notes

For added flavor, consider incorporating a clove of minced garlic into the dressing. You can also customize the salad by adding additional ingredients such as olives, bell peppers, or grilled chicken. If you prefer, substitute the feta cheese with goat cheese or leave it out for a vegan option.
