Ingredients
  

  • 4 tablespoons olive oil
  • 4 cod fillets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1/2 cup dry white wine
  • 1/4 cup fresh basil chopped
  • 1 tablespoon lemon juice

Instructions
 

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Season the cod fillets with salt and black pepper.
  • Place the fillets in the skillet and sear for 3-4 minutes on each side until golden brown.
  • Remove the fillets from the skillet and set aside.
  • Add the remaining olive oil to the skillet and sauté the minced garlic until fragrant.
  • Add the cherry tomatoes and cook until they start to soften.
  • Pour in the white wine and let it simmer until reduced by half.
  • Stir in the chopped basil and lemon juice.
  • Return the cod fillets to the skillet and spoon the sauce over them.
  • Let the cod cook in the sauce for an additional 2 minutes.
  • Remove from heat and let the dish rest for 5 minutes before serving.

Notes

When searing the cod, ensure the skillet is hot to achieve a nice crust on the fish. Use fresh basil for a more vibrant flavor, and cherry tomatoes of different colors can add visual appeal to the dish. Adjust the seasoning to taste, and pair this dish with a light salad or crusty bread to soak up the delicious sauce.
