Ingredients
  

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 medium carrot diced
  • 1 stalk celery diced
  • 6 cups chicken broth
  • 1 cup pastina pasta
  • 1 cup cooked chicken shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, minced garlic, diced carrot, and diced celery to the pot and sauté until vegetables are softened, about 5 minutes.
  • Pour in chicken broth and bring to a boil.
  • Add pastina pasta to the boiling broth and cook for 5 minutes.
  • Stir in shredded chicken, salt, and black pepper and simmer for an additional 5 minutes.
  • Remove the pot from heat and let the soup rest for 5 minutes.
  • Stir in chopped parsley and serve hot, garnished with grated Parmesan cheese.

Notes

For a richer flavor, you can use homemade chicken broth or add a splash of white wine while cooking the vegetables. If you prefer a thicker consistency, reduce the broth by one cup or add an extra handful of pastina. Make sure to stir the pastina regularly to prevent it from sticking to the bottom of the pot.
