Ingredients
  

  • 4 cup peaches sliced
  • 2 cup blueberries
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine sliced peaches and blueberries.
  • Add lemon juice and cornstarch to the fruit mixture and stir to coat evenly.
  • Pour the fruit mixture into the baking dish.
  • In another bowl, whisk together flour, granulated sugar, baking powder, and salt.
  • Add melted butter, milk, and vanilla extract to the dry mixture and whisk until smooth.
  • Pour the batter evenly over the fruit in the baking dish.
  • Sprinkle brown sugar and ground cinnamon on top of the batter.
  • Bake in the preheated oven for 40 minutes or until the top is golden brown and fruit is bubbly.
  • Remove from the oven and let it rest for 10 minutes before serving.

Notes

For best results, use ripe peaches and fresh blueberries to enhance the flavor of the cobbler. If you prefer a less sweet dessert, you can reduce the amount of granulated sugar. This cobbler pairs well with a scoop of vanilla ice cream or a dollop of whipped cream.
