Ingredients
  

  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 2 large eggs beaten
  • 1 cup bean sprouts
  • 1/2 cup roasted peanuts chopped
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped
  • 1 tablespoon lime juice
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • 1/2 teaspoon red pepper flakes

Instructions
 

  • Cook the rice noodles according to package instructions then drain and set aside.
  • Heat the vegetable oil in a large skillet over medium heat.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Push the garlic to the side and pour the beaten eggs into the skillet, stirring until scrambled.
  • Add the cooked noodles, bean sprouts, and half of the peanuts to the skillet.
  • In a mixing bowl, whisk together lime juice, soy sauce, peanut butter, brown sugar, fish sauce, and red pepper flakes.
  • Pour the sauce over the noodle mixture and toss to combine.
  • Cook for 2-3 minutes until everything is heated through.
  • Remove from heat and let it rest for 5 minutes.
  • Garnish with remaining peanuts, green onions, and cilantro before serving.

Notes

For the best results, ensure that all your ingredients are prepped and ready before you start cooking to maintain a smooth workflow since the cooking process is quick. Adjust the spice level by modifying the amount of red pepper flakes and remember to taste and tweak the sauce to your preference.
