Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans chopped
  • 1 1/2 cups light brown sugar packed
  • 1 1/2 cups boiling water

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Stir in the milk, melted butter, and vanilla extract until combined.
  • Pour the batter into a greased 9x13 inch baking dish.
  • Evenly sprinkle the chopped pecans over the batter.
  • Spread the light brown sugar evenly over the pecans.
  • Carefully pour the boiling water over the entire mixture in the baking dish.
  • Bake in the preheated oven for 45 minutes or until the top is golden and the center is set.
  • Allow the cobbler to rest for 10 minutes before serving.

Notes

For best results, serve the pecan cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream. Make sure to use boiling water to achieve the perfect gooey consistency. The dish can be made a day ahead and reheated gently in the oven or microwave before serving. Enjoy!
