Ingredients
  

  • 4 Salmon fillets
  • 1 cup Pecans
  • 1/4 cup Panko breadcrumbs
  • 2 tablespoons Olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 Lemon cut into wedges

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the pecans in a food processor and pulse until finely chopped.
  • In a mixing bowl, combine chopped pecans, panko breadcrumbs, olive oil, salt, and black pepper.
  • In a small bowl, mix Dijon mustard and honey until smooth.
  • Pat the salmon fillets dry with paper towels.
  • Spread the honey mustard mixture evenly over the top of each salmon fillet.
  • Press the pecan mixture onto the top of each fillet to coat.
  • Place the salmon fillets on a baking sheet.
  • Bake in the preheated oven for 15-20 minutes, until the salmon is cooked through and the crust is golden brown.
  • Let the salmon rest for 5 minutes before serving.
  • Serve with lemon wedges on the side.

Notes

For the best results, ensure that your salmon fillets are of uniform thickness to promote even cooking. If the pecan topping begins to brown too quickly, lightly cover the salmon with aluminum foil during baking. This dish pairs beautifully with a side of roasted vegetables or a simple green salad for a balanced meal.
