  • 1 Knife
  • 1 large mixing bowl
  • 1 Whisk
  • 1 Small bowl
  • 1 serving platter

Ingredients

  • 1/4 cup Pickles sliced
  • 4 slice Sandwich bread toasted
  • 4 cup Watermelon cubed
  • 1 cup Feta cheese crumbled
  • 1/4 cup Red onion thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon Fresh mint leaves chopped

Instructions

  • Toast the sandwich bread until golden brown and set aside to cool.
  • In a large mixing bowl, combine the watermelon cubes, sliced pickles, crumbled feta cheese, and red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make a dressing.
  • Pour the dressing over the watermelon mixture and gently toss to combine all ingredients.
  • Allow the salad to rest for 5 minutes to let the flavors meld.
  • Arrange the toasted sandwich bread on a serving platter.
  • Spoon the watermelon salad over the bread slices evenly.
  • Garnish the salad with chopped fresh mint leaves before serving.

Notes

For the best flavors, ensure your watermelon is sweet and juicy, as this will complement the saltiness of the feta and the tanginess of the pickles. Feel free to experiment with different types of bread, such as sourdough for a more robust flavor. Adjust the seasoning according to your taste, and consider adding a splash of balsamic glaze for added depth.
