Ingredients
  

  • 1 medium pineapple peeled and cored
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions
 

  • Chop the pineapple into small pieces using a knife and cutting board.
  • Place the chopped pineapple into a medium saucepan.
  • Add the granulated sugar and lemon juice to the saucepan.
  • Cook the mixture over medium heat, stirring frequently with a wooden spoon.
  • Once the sugar dissolves, let the mixture simmer for about 30 minutes until thickened.
  • Add the vanilla extract and stir well to combine.
  • Remove the saucepan from heat and let the jam cool slightly.
  • Transfer the jam into a jar and seal with a lid.
  • Allow the jam to rest at room temperature for 12 hours to set properly.

Notes

For best results, ensure the pineapple is ripe for optimal sweetness. Stir the mixture continuously to prevent burning and to achieve a smooth, consistent texture. Adjust the sugar level to your preference, and consider adding a pinch of salt to enhance the flavors further.
