Ingredients

  • 4 pieces pork chops bone-in
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces pineapple slices canned or fresh
  • 1/4 cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon butter

Instructions

  • Season the pork chops with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the pork chops to the skillet and sear for 3-4 minutes on each side until browned.
  • Remove the pork chops from the skillet and set them aside.
  • In the same skillet, add pineapple slices and cook for 2 minutes on each side until caramelized.
  • Remove the pineapple slices and set them aside.
  • Reduce heat to medium and add pineapple juice, brown sugar, soy sauce, and garlic powder to the skillet, stirring to combine.
  • Return the pork chops to the skillet and spoon sauce over them.
  • Cover the skillet and cook for an additional 10 minutes or until the pork is cooked through.
  • Add butter to the skillet and let it melt into the sauce.
  • Return the pineapple slices to the skillet and warm them through.
  • Let the pork chops rest for 5 minutes before serving.

Notes

For best results, ensure the pork chops reach an internal temperature of 145°F using a meat thermometer. This dish can be paired with a side of steamed rice or vegetables to balance the sweetness of the pineapple sauce. Adjust the seasoning according to your taste preference, and feel free to add a pinch of red pepper flakes for a hint of spice if desired.
