Ingredients
  

  • 2 tablespoon olive oil
  • 1 pound pork shoulder cubed
  • 1 large onion diced
  • 3 clove garlic minced
  • 2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup chicken broth
  • 1 can diced tomatoes 14 ounces
  • 1 can kidney beans drained and rinsed
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add cubed pork shoulder and cook until browned on all sides.
  • Remove pork from pot and set aside.
  • In the same pot, add diced onion and minced garlic, sauté until the onion is translucent.
  • Stir in ground cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper.
  • Return the pork to the pot and stir to coat with spices.
  • Pour in chicken broth and bring to a simmer.
  • Add diced tomatoes, kidney beans, green bell pepper, and red bell pepper.
  • Cover the pot and let it simmer for 1 hour, stirring occasionally.
  • Stir in lime juice and chopped cilantro.
  • Allow chili to rest for 10 minutes before serving.

Notes

For a richer flavor, consider cooking the chili a day in advance and reheating it, as this will allow the spices and ingredients to meld together more thoroughly. Adjust the spice level to your preference by adding more cayenne pepper or chili powder. Adding a dollop of sour cream or a sprinkle of cheese when serving can enhance the flavor and provide a creamy texture contrast.
