Ingredients
  

  • 1 pound ground pork
  • 2 tablespoon olive oil
  • 1 cup onion diced
  • 2 clove garlic minced
  • 1 cup bell pepper diced
  • 1 can diced tomatoes 14.5 ounces
  • 4 cup chicken broth
  • 1 cup cooked rice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the ground pork and cook until browned.
  • Stir in the diced onion and minced garlic, and cook until softened.
  • Add the diced bell pepper and cook for an additional 3 minutes.
  • Pour in the diced tomatoes and chicken broth, stirring to combine.
  • Add the cooked rice, oregano, basil, black pepper, and salt.
  • Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  • Remove from heat and let the soup rest for 5 minutes before serving.

Notes

For extra flavor, consider adding a splash of Worcestershire sauce or a pinch of red pepper flakes while the soup simmers. Additionally, you can top the soup with shredded cheese or chopped fresh parsley before serving for added taste and presentation.
