Ingredients
  

  • 1 pound ground beef
  • 4 cups beef broth
  • 2 cups potatoes diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, about 5 minutes.
  • Remove the beef from the pot and set aside.
  • In the same pot, add onions, carrots, and celery; sauté until onions are translucent.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Return the beef to the pot and season with salt, pepper, thyme, and oregano.
  • Add potatoes to the mixture and pour in the beef broth.
  • Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  • Check if the potatoes are tender and adjust seasoning if necessary.
  • Remove from heat and let the soup rest for 5 minutes before serving.

Notes

For a creamier texture, you can blend a portion of the soup and then stir it back into the pot. Adjust the seasoning to your preference and add a splash of cream or milk for added richness. If you prefer a spicier soup, consider adding a pinch of red pepper flakes or a dash of hot sauce.
