  • 1 Frying pan
  • 1 Wooden spoon

Ingredients
  

  • 4 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 cups potatoes peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions chopped for garnish

Instructions
 

  • Heat a large pot over medium heat and cook the chopped bacon until crispy.
  • Remove the bacon and set aside, leaving the rendered fat in the pot.
  • Add diced onion to the pot and sauté until translucent.
  • Stir in the garlic and cook for an additional minute.
  • Add the diced potatoes and chicken broth to the pot.
  • Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in the heavy cream, salt, and pepper, and heat through.
  • Remove from heat and let the soup rest for 5 minutes.
  • Ladle the soup into bowls and top with crispy bacon and chopped green onions.

Notes

For a thicker soup, you can mash some of the potatoes once they are tender. If you prefer a smoother consistency, consider using an immersion blender. Adjust the seasoning according to your taste, and feel free to add additional herbs such as thyme or parsley for more flavor. Serve with crusty bread for a complete meal.
