Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 potatoes peeled and diced
  • 4 cups beef broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the ground beef and cook until browned, about 5 minutes.
  • Remove the beef from the pot and set it aside.
  • In the same pot, add the chopped onion and sauté until translucent.
  • Add the minced garlic and cook for another minute.
  • Stir in the diced potatoes and beef broth.
  • Bring the mixture to a boil, then reduce the heat to a simmer.
  • Cook until the potatoes are tender, about 15 minutes.
  • Return the cooked ground beef to the pot.
  • Stir in the milk, salt, black pepper, and dried thyme.
  • Let the soup simmer for another 5 minutes.
  • Remove the pot from heat and stir in the shredded cheddar cheese.
  • Let the soup rest for 5 minutes to thicken.
  • Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, consider adding a pinch of smoked paprika or a dash of hot sauce to the soup just before serving. If you prefer a thicker consistency, mash some of the potatoes with a fork before adding the cheese. This dish is adaptable, allowing for the inclusion of other vegetables like carrots or celery if desired.
