Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 4 medium potatoes peeled and cubed
  • 2 carrots sliced
  • 1 bell pepper chopped
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sautéing until the onion is translucent.
  • Stir in the cubed potatoes, sliced carrots, and chopped bell pepper.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Season with salt, black pepper, thyme, and add the bay leaf.
  • Reduce the heat to low, cover the pot, and let simmer for 45 minutes.
  • Stir occasionally to prevent sticking and ensure even cooking.
  • Once the vegetables are tender, remove the bay leaf.
  • Let the stew rest for 10 minutes before serving.

Notes

For added flavor, consider incorporating a splash of white wine during the sautéing of the onions and garlic. If you prefer a thicker stew, mash some of the potatoes within the pot before serving. This dish can easily be adapted to include additional vegetables or proteins such as peas or chicken for variety.
