Ingredients
  

  • 1 tablespoon oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 6 cups chicken broth
  • 1 pound frozen potstickers
  • 2 cups baby spinach
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions sliced
  • Salt and pepper to taste

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent.
  • Stir in minced garlic and grated ginger, cooking for 1 minute.
  • Pour in chicken broth and bring to a boil.
  • Add frozen potstickers to the pot and cook according to package instructions.
  • Stir in baby spinach and let it wilt.
  • Add soy sauce and sesame oil, stirring to combine.
  • Season with salt and pepper to taste.
  • Remove from heat and let rest for 5 minutes.
  • Garnish with sliced green onions before serving.

Notes

For a richer flavor, you can add a splash of rice vinegar or chili oil to taste. If you prefer a thicker soup, mix a tablespoon of cornstarch with water and stir it into the broth before adding potstickers. To make it a complete meal, consider adding shredded chicken or tofu for extra protein.
