  • 1 measuring cup

Ingredients
  

  • 2 tablespoon olive oil
  • 1 whole chicken cut into pieces
  • 1 large onion chopped
  • 2 clove garlic minced
  • 1 bell pepper chopped
  • 2 medium potatoes peeled and diced
  • 2 carrots sliced
  • 2 cup chicken broth
  • 1 cup tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chicken pieces and brown them on all sides.
  • Remove the chicken and set aside.
  • In the same pot, add onion, garlic, and bell pepper, cooking until softened.
  • Return the chicken to the pot and add potatoes and carrots.
  • Pour in chicken broth and tomato sauce.
  • Stir in oregano, cumin, and bay leaf.
  • Season with salt and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Remove from heat and let rest for 10 minutes.
  • Garnish with fresh cilantro before serving.

Notes

For best results, use bone-in chicken pieces for a richer flavor, and adjust the seasoning to your taste preference. This stew is even better the next day, so consider making it ahead of time for deeper flavors.
