Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup canned pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  • In a mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, mix the pumpkin puree, applesauce, brown sugar, vegetable oil, egg, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and stir with a spatula until just combined.
  • Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring to a cooling rack.

Notes

For the best results, ensure all ingredients are at room temperature before mixing, as this helps in even blending and better muffin texture. Additionally, do not overmix the batter to avoid dense muffins; stir just until the ingredients are barely incorporated.
